When I was planning my dish to represent the Ravens I wanted something purple, like their team colors. However I didn't think purple guacamole would be very appetizing. I knew the most appealing purple food I could think of was purple potatoes. I cook them all the time to keep food exciting for The First Mate.
A search on Pinterest found my favorite thing, pizza. (I once ate pizza for 6 meals in a row.) I tweaked the recipe and made it to a something that would please me and the other people watching the game.
Winning Pizza- Pizza with red onions, purple potatoes, and goat cheese
- 10 Fingerling or 15-20 Bite Size Purple Potatoes (I also used some gold potatoes as well)
- 1 Tbs + 2 tsp Olive Oil
- 1 medium Red Onion, cut into thin half round slices
- 2 (13.8oz packages) Pizza Dough
- 1/4 cup Cornmeal
- Flour (for rolling out dough)
- 1 1/2-2 cups Mozzarella (shredded)
- 3 oz Goat Cheese
- 2 cloves Garlic, minced
- 2 tsp Fresh Thyme
- 2 pinches Salt
Preheat the oven to 450 degrees and start to boil a pot of water for the potatoes.
Heat a tablespoon of olive oil in a medium skillet. Slice the red onion (another Raven's purple ingredient) and add to the skillet. Cook until soft and caramelized and set aside.
Boil the potatoes for 10 minutes, or until they are tender enough to pierce easily with a fork. Drain and set aside.
On a floured work surface roll out one pizza crust until about 1/4 inch thick. Shape doesn't matter as long as it fits on your pans. Sprinkle a cookie sheet with half the cornmeal (2 Tbsp) and lay pizza on top. Repeat with the second crust and place on another cornmealed cookie sheet.
Top each pizza dough with mozzarella cheese. Then layer on the onions. Slice the potatoes into quarters and spread atop the pizza. Sprinkle on a pinch of salt and add the minced garlic and thyme. Crumble the goat cheese on to the pizza and place into the oven.
Bake the pizzas for 15 minutes. I baked each pizza separately, so your cooking time may vary if baked at the same time.
Drizzle remaining olive oil (2 tsp) on top. Slice however you like and enjoy. This was seriously my dream pizza. I think I'll use more goat cheese next time though. I love goat cheese!
