Easy Minute® Rice Stuffed Peppers

I love to cook, but sometimes I just don't have time. OK, most days I just don't have time. Between a full time day job, a toddler, a blog, an attempt at some downtime, and a moment with The Captain, cooking is a luxury most days. Despite my lack of time, I still want to eat something healthy and tasty. 

I love to cook and I am pretty good at whipping up almost anything. However, there is one thing that I can never seem to get right, rice! I have tried every tip and technique but I always end up with undercooked rice or watery goo. When I heard about Minute® Ready to Serve Rice I knew it could help me out tremendously. 

I picked up a couple packages of Minute's Brown and Wild Rice ready to serve cups on my latest shopping trip. When I came home from the store with my rice cups in hand I was ready to put them to use for a quick lunch. I surveyed my fridge and fresh produce for ideas. I had bought some beautiful red bell peppers to make stuffed peppers, but that is a fairly time consuming dish. It sounded good, so I gave it a try.  The end result was done in just over 15 minutes and was every bit as satisfying as the traditional recipe that takes 3 times as long.

Here's the recipe:


2 red bell peppers
1 package Minute® Ready to Serve Rice Brown & Wild Rice
1 clove garlic
1/2 a small brown onion
2 Tbsp. olive oil
1/4 c. canned tomatoes
1/4 c. soy crumbles (or ground beef if you like)
1/4 c. Italian blend shredded cheese
Salt and pepper to taste

Makes 2 peppers (I made one without cheese or soy for The First Mate)

First start off by prepping your peppers. Remove the tops and scoop out any seeds and white membrane. If your pepper wont stand up, trim just a little bit off the bottom to make it flat. Be careful not to make a hole, you want to keep them stuffed.

Place them in a microwaveable dish and cover with plastic wrap. Poke a few holes to vent the steam and microwave for 4 minutes.

While the peppers are cooking mince the garlic and dice the onions. Heat a tablespoon of olive oil in a skillet and sauté the onions and garlic until they start to brown. Reduce the heat and add the tomatoes. Let this continue to cook until it thickens.

In a separate pan heat the remaining tablespoon of olive oil and add the crumbles. Cook until browned and set aside.

By now the peppers should be done. Set them aside to cool a little and toss your Minute® Ready to Serve Rice cups in the microwave. Follow the package instructions. To prepare two cups at once just increase the cook time to 1 minute and 30 seconds. Be sure to pierce or peel the top to vent.

In a medium size bowl mix together the cooked rice, tomato mixture, and the crumbles. Add salt and pepper to your liking. I stuffed one pepper for The First Mate before I added the crumbles. Spoon the filling into your peppers and press down to really pack them full. Once you have used all of your filling top with the shredded cheese. Place back in the microwave for 2 minutes, or until the cheese it melted.

That's it! Now it's time to enjoy. When I cut into my pepper I was amazed at how perfectly tender it was without being boiled and baked like most recipes call for. The Minute® Ready to Serve Rice was far better than any rice I had cooked before myself. I really liked the flavor of the brown and wild rice, and the added nutrients are just what I like in a meal for my toddler and I. 

I will definitely be making this recipe again for the entire family. When my dad saw the remains of The First Mate's pepper he was sad to have missed them. Even now The Captain mentioned he still hasn't gotten to taste one. I think I will make them again this week.
