Scurvy Free Pirate Pasta

I love vegetables (good thing I'm a vegetarian) and this is my favorite pasta recipe EVER! You can make it your own by adding whatever vegetables you enjoy. I would have added a lot more if we had them on had. 

So what is Scurvy Free Pirate Pasta? It's pasta loaded up with healthy vegetables rich in Vitamin C and other nutrients. 

Here are the ingredients:

  • 1 pound pasta (I used an assorted blend from the local farmer's market)
  • 1 Eggplant
  • 2 Bell Peppers (I prefer yellow, red, or orange)
  • 1 Red Onion
  • 1 Head of Broccoli
  • 1 Jar of Artichoke Hearts
  • 2 tablespoons minced garlic
  • Butter and Olive oil to coat
  • Salt and Pepper

Other great recipe additions include:
  • Sun dried Tomatoes
  • Capers
  • Kalamata Olives
  • Toasted Pine Nuts
  • Asparagus
  • Cherry Tomatoes

Cooking Instructions:

Boil salted water for the pasta and begin to prepare the vegetables.

Chop the eggplant, peppers, and onions into large bite size pieces. The baby hand is not necessary to make this recipe.

Saute the vegetables

Add some extra virgin olive oil to coat a sauté pan and let it heat up. Toss in the chopped vegetables and let them cook, stirring occasionally.

Once the water is to a boil, cook your pasta according to the package instructions.

Meanwhile, break up the head of broccoli into bite size pieces and steam until tender.

Once the vegetables have started to cook down and brown a little, create a space in the middle of the pan. Add a splash more olive oil and sauté the garlic. Then add in the broccoli and artichokes. Be sure to stir gently to combine the ingredients.

Add some butter and drizzle with olive oil to create a light sauce  Season with salt and pepper to taste and top with Parmesan cheese.
